Savoury Chef’s Tasting Menu is derived from the ethereal whim of a chef’s intuition, an organic concoction of local and market-fresh ingredients. This concept is related to dégustation, “a careful, appreciative tasting of various foods,” a term which stems from French kitchens in the early 20th century. We create full, multi-course menus highlighting signature seasonal dishes.
This intimate and exciting experience leaves a lasting impression; it is a special social affair of the utmost quality. We can design a Tasting Menu based upon a certain theme, and/or according to your general tastes; or, you can leave the creative process completely up to us and allow yourself the luxury of a pleasant surprise.
Pricing for the Tasting Menu begins at 95.00 per person (based on 25 guests; for smaller events please inquire for pricing). Experienced serving staff will be on hand, and we can also provide appropriate wine pairings to accompany each course.

warm arctic char “salad”
baked Arctic Char with braised leek and a fingerling potato vinaigrette.
spot prawn stuffed zucchini blossom
zucchini blossom fritter stuffed with a spot prawn mousse, Dungeness crab ravioli, in a star anise/fennel scented shellfish bisque with lemongrass foam.
squab au vin
breast of squab on a ragout of chanterelles and double smoked bacon, cipollini onion puree and a rich squab jus
pork and lentils
Braised pork cheek on a bed of lentils and wilted spinach.
grilled Fraser Valley lamb sirloin with jerusalem artichoke fondant and preserved lemon gnocchi with a thyme and roasted red pepper lamb jus.
roasted venison loin
pan roasted venison loin with a pumpkin sage puree, grainy mustard spaetzle and a blackberry jus
peach rice mousse with marinated stone fruits. This is an amazing light and fresh dessert.
