British Columbia offers an abundance of quality produce and meats, and sourcing out local farmers drives a significant part of our menu creation. By using locally available products whenever possible, we are able to serve up fresh and robust dishes. This not only contributes to a positive and nutritional dining experience, but it also supports hard working local farmers and suppliers.
We’d like to show our appreciation by introducing you to some of our suppliers:
Sloping Hills Farms – Qualicum Beach, BC.
Specializing in heritage-breed Berkshire pork, Sloping Hill Farms humanely grows each and every animal on it’s farm. They practice free-range and organic practices, and quality of life for the animals is given the utmost priority.
Feed is 100% vegetarian, and the farm grows everything they need right there. The proof of this quality is in the pork – it tastes amazing!
Pemberton Meadows – Natural Beef – Pemberton, BC
Pemberton Meadows Natural Beef proudly raises their cattle on feeds that are byproduct free, and contain no additives or rendered ingredients. The hay and grains are grown right on the farm in Pemberton, or on a local neighbour’s farm. The cattle have free access to open pasture and shelter, which means they are healthier, do not require any antibiotics, and are hormone and steroid free.
Maple Hill Farms Chicken – Mt.Lehman, BC
A family owned business in Mt. Lehman, Maple Hill Farms provides non-medicated chicken, fed vegetable based rations that are growth hormone and animal by-product free. These chickens are raised with ample natural light and have room to move freely.
Polderside Farms – Chilliwack, BC.
Meet Jens-Hugo and Virginia Jacobson of Polderside Farms, a husband and wife team distributing some of the best poultry in the province. You’ll find their sunflower-seed-fed duck and rebro chicken on the menus of Vancouver’s top restaurants – chefs love Polderside for their unconventional methods: ducks are hand-fed, inspected twice daily, and enjoy ample free-run space. Terra Coffee and Tea Ltd. - Montreal, Quebec
Terra Coffee and Tea represents the culmination of years of hard work and commitment by Carlo Granito, a humanist and entrepreneur who’s passionate about coffee. As a philanthropist who puts quality first, Carlo has worked with his team to develop a remarkable approach that enables them to bring the world’s best coffees to the Canadian and international markets.
The path taken by Carlo is far from typical. Motivated by a concern for the inequalities faced by coffee farmers, he follows a golden rule when purchasing green coffee beans. After an extremely meticulous search and selection process that can take up to 10 years, he generally offers above-market prices (up to 80% higher) so that farmers, their families and their communities have the means to improve their living conditions.
