I just wanted to send a quick note out that I will be appearing on Breakfast Television (City TV) on September.09.2008 at around 9:00am! I will be demonstrating a recipe and talking about being a personal chef and caterer. Be sure to tune in!
Recipe from the day:
MISO BLACK COD WITH ZUCHINNI SPAGHETTI AND SOY BRAISED HONSHIMEJI MUSHROOMS
Yield: 2 entree/4 appetizer
- 1 lb Black Cod (also known as Sablefish) cut into 2-4 portions
- 2 T grapeseed oil
Marinade
- 4 T white miso
- 1/2 t lemon or yuzu juice
- 2 T mirin
- 2 T sake
- 1 t tamari/soy sauce
Method
- Mix marinade ingredients thoroughly.
- Marinate fish in mixture for at least 4 hours and up to 2 days.
- Preheat oven to 375.
- When ready to serve wipe excess marinade from fish
- Heat a frying pan over medium high heat
- Add oil to the pan, then fish and sear until golden (this will not take long at all), flip fish then finish in the oven for 5-8 minutes or until fish is firm to the touch
- Serve on a bed of zuchinni spaghetti and garnish with soy braised Honshimeji mushrooms
Zucchini Spaghetti
- 2 medium zucchini (green or yellow)
- 3 T butter
- salt and pepper to taste
Method
- Julienne zuchini with a mandolin or a knife
- Heat a frying pan over medium high heat
- Once hot add butter and heat until foaming, then add zuchinni and salt and sautee just until tender.
Soy Braised Honshimeji Mushrooms
- 300 g Honshimeji mushrooms
- 4 T soy sauce
- 2 T water
- 2 T butter
Method
- Trim the mushrooms to the root.
- Place all ingredients in a pot and cover loosely with foil.
- Simmer over low heat until mushrooms are tender and most of the liquid has evaporated.
