Prawn Cakes

These make a great first course or light lunch! Serve with a nice salad with a tangy vinaigrette.

Prawn Cakes

Ingredients

  1. 1 lb shelled prawns
  2. 1/4 c coarsley chopped cilantro
  3. 3 green onions, thinly sliced
  4. 1 tbs sambal oelek
  5. 1 egg
  6. 1/2 c panko breadcrumbs
  7. zest and juice of 1 lemon
  8. salt and pepper to taste

Method

  1. Coarsely chop the prawns
  2. Put half the chopped prawns in the food processor and pulse until finely chopped
  3. Transfer the coarsely and finely chopped prawns to a bowl
  4. Add the rest of the ingredients and mixed until combined
  5. Shape mixture into cakes
  6. Optional – dredge prawn cakes in additional panko crumbs
  7. Melt 2 tbs butter in a pan over medium heat
  8. Fry cakes in melted butter until golden brown on each side and cooked through
  9. Serve with a salad and creamy sambal sauce (recipe follows)

Creamy Sambal Sauce

Ingredients

  1. 1/2 c thick mediterranean style yogurt
  2. juice and zest of 1 lemon
  3. 1/4 coarsley chopped cilantro
  4. 2 tbs Sambal Oelek (or to your taste)
  5. 2 green onions, finely sliced

Method

  1. Mix together all the ingredients and serve with prawn cakes
