These make a great first course or light lunch! Serve with a nice salad with a tangy vinaigrette.
Prawn Cakes
Ingredients
- 1 lb shelled prawns
- 1/4 c coarsley chopped cilantro
- 3 green onions, thinly sliced
- 1 tbs sambal oelek
- 1 egg
- 1/2 c panko breadcrumbs
- zest and juice of 1 lemon
- salt and pepper to taste
Method
- Coarsely chop the prawns
- Put half the chopped prawns in the food processor and pulse until finely chopped
- Transfer the coarsely and finely chopped prawns to a bowl
- Add the rest of the ingredients and mixed until combined
- Shape mixture into cakes
- Optional – dredge prawn cakes in additional panko crumbs
- Melt 2 tbs butter in a pan over medium heat
- Fry cakes in melted butter until golden brown on each side and cooked through
- Serve with a salad and creamy sambal sauce (recipe follows)
Creamy Sambal Sauce
Ingredients
- 1/2 c thick mediterranean style yogurt
- juice and zest of 1 lemon
- 1/4 coarsley chopped cilantro
- 2 tbs Sambal Oelek (or to your taste)
- 2 green onions, finely sliced
Method
- Mix together all the ingredients and serve with prawn cakes
