Scones

Scones in a Basket

I can not think of a better way to start your morning than with a hot scone fresh from the oven! Eat them dripping with fresh butter and luscious fruit preserves.

Ingredients

  1. 375 ml flour
  2. 5 ml salt
  3. 10 ml baking powder
  4. 5 ml baking soda
  5. 125 ml cold unsalted butter
  6. 1 egg
  7. 125 ml Mediterranean style yogurt*
  8. 125 ml milk

If you cannot find Mediterranean style yogurt, drain regular plain yogurt in a coffee filter overnight, use the thickened yogurt in it’s place

Method

  1. Preheat your oven to 375 degrees Fahrenheit
  2. Sift together the dry ingredients in a medium sized bowl
  3. In a separate bowl mix the wet ingredients
  4. Cut the butter into the flour mixture until it resembles coarse crumbs
  5. Add the wet ingredients to the dry and lightly mix with a fork until just combined
  6. Turn out onto a floured board and gently bring the dough together
  7. Dust with flour and gently pat until the dough is about 10 cm thick
  8. Cut with a round shaped cutter
  9. Turn onto a silpat or parchment lined baking sheet
  10. Bake for approximately 20 minutes or until golden brown
  11. Serve warm

Variation

Lemon Raspberry

  1. Add 250 ml fresh or frozen raspberries and the zest of one lemon to the dry ingredients before you add the wet

Yield: 8 scones

    Hi Taryn! I’ve had these scones, so yogurt was your secret ingredient, Oh my were they ever good. This sounds easy enough for anyone to make though!
